Matcha directly derives from Tencha green tea variety, whose cultivation takes place away from sunlight. When a green tea is exposed to sunlight, theanin (which gives the sweet taste) turns into catechin (source of bitterness). Therefore, Tencha and Matcha are tea with a delicate taste, due to the scarce presence of catechin.
Matcha is excellent with desserts like Dorayaki and Daifuku.
